If you don’t follow recipes exactly, why not?  One might assume they’ve been tested and vetted for accuracy and taste.  

Is it out of laziness, ego, confidence and expertise, experimentation, or ignorance?  

Your reason is as good as mine, and I suspect that the reasoning might change from dish to dish, but it’s important to understand the reasoning in each case, and to be aware of that reason.

The same applies to rules.
